Ingredients

  • 2.2 lbs. chicken breast or boneless chicken.
  • 0.8 cup coconut oil or natural oil.
  • 1 tbsp peppercorn.
  • 1-2 pcs. of bay leaves.
  • 1 large piece of white onion chopped.
  • 4 cloves of garlic, minced.
  • 60 ml soy sauce.
  • 1 small-sized ginger, minced.
  • 0.7 tbsp, or about 3 grams of turmeric powder.
  • 2 pieces of sliced red/green chili, optional.
  • 0.2 cup vinegar.
  • Salt to taste.
  • 1 lb of white rice.

Cooking Instructions

  1. Put the chicken breast in a pan with water to boil. Add 2 pieces of bay leaves, peppercorns, and salt. The process takes around 10-15 minutes to complete.
  2. Mince the white onion and garlic separately, and slice the green/red chili if you are using it.
  3. Save the water in another container and remove the chicken from the pan, and shred it.
  4. Now use the same pan (do not need to wash it), add the coconut or natural oil, and heat over medium heat.
  5. Add onion and garlic, stirring until fragrant. Add chili if you are using it.
  6. Take a pan, add soy sauce, turmeric powder, and shredded chicken into it. Stir until the color separates from both the soy sauce and the turmeric powder.
  7. To add some flavor, add 1 tablespoon of the water that the chicken was boiled in.
  8. When the flavor is good, heat it up over high heat to toast the chicken. Now spread the chicken on the pan and leave it for 3-4 minutes, stir and repeat, so the chicken gets more toasted.

White rice cooking steps

  1. Put in 1 lb of white rice and wash it.
  2. Add 2 cups of water and rice to it.
  3. Cover it and boil on medium heat.
  4. Lower the heat when the rice starts to boil.
  5. It takes 15-20 minutes to boil.
  6. Turn off the heat and leave for 5 minutes.

Notes

Pan or pot: it’s up to you whether you choose a pan or a pot. The pan has more surface area, which helps the chicken toast better.

Use chicken thighs or chicken breast: I used chicken breast because of a low-fat, low-carb diet. But if you are not avoiding fats, then you can choose chicken thighs that give more flavor.
