It is a family favorite Filipino tasty comfort dish made up of chicken meat, mushrooms, peas, carrots, creamy sauce, and sausages. I love to cook creamy Chicken pastel or pastel de pollo on special occasions, like Christmas.
 
The idea of this comfort food is taken from Spain’s pastel de pollo. The simple version of chicken pastel without crust is superb. It becomes easier to make the dish without it. You can pair the creamy chicken stew with white rice.

Ingredients

  • 2.5 pounds of chicken breast. Cut into small cubes.
  • Juice of 1 lemon.
  • 1.5 tablespoons of soy sauce.
  • 1 tablespoon of canola oil.
  • 2 pieces of sliced chorizo de Bilbao.
  • 1.5 pieces of potato cut into cubes.
  • 1 piece of red bell pepper sliced.
  • 1 piece of green pepper sliced.
  • 2 pieces of carrot sliced.
  • 7 hot dogs sliced.
  • 1 cup sliced mushrooms.
  • 2 full cups of all-purpose cream.
  • 1 piece of lime.
  • 1.5 pieces of onion chopped.
  • 4 cloves of garlic.
  • 1 cup water.
  • Salt and black pepper to taste.

Cooking Instructions

  1. Take a bowl and combine chicken, soy sauce, and lemon juice. Mix it well and let it rest for at least 25 minutes.
  2. Heat oil in a cooking pot over medium heat and add garlic and onion.
  3. Add Chorizo de Bilbao and cook it till the color changes to light brown.
  4. Add chicken and cook until the color turns golden.
  5. Add water and boil.
  6. Put the hot dogs into the pot. Cook until the liquid reduces to half.
  7. Add carrot, potato, all-purpose cream, and evaporated milk, and cover it. Cook it for 5 minutes.
  8. Add and mix the mushrooms and bell pepper. Mix well and cook for 2 minutes.
  9. Add salt and black pepper to taste.
  10. Chicken pastel is ready; now serve it with warm white rice and enjoy!

Notes

Mushrooms: You can skip the mushrooms if you don’t like them. I love to eat them; that’s why I am using them.

Pie Crust: If you want to skip the pie crust, then you can skip it.

All-purpose cream: Never skip the cream because it is used to give the dish a creamy texture. Do not replace the cream with milk only.

  • 5 spoons of cold water.

  • 1 egg for egg wash.
  • 1 tablespoon of water.

How to Make a Flaky Pie Crust or Prepare the Dish Traditionally?

If you want to make it traditionally, then you must follow the procedure.

  • Take a bowl and mix the salt, flour, baking powder, and sugar.
  • Mix the butter until the mixture looks like rough crumbs.
  • Add 1 tablespoon of water and mix it well until the mixture is not too sticky.
  • Put the mixture on the surface and use a rolling pin to make it flat and round. Note that you can use a rolling pin until it completely covers the pan or cooking pot.
  • If you are already using a pan that can easily go into the oven, then cover it completely with the dough that you made using the rolling pin.
  • Make small cuts at the top so the steam goes out easily.
  • Bake it in the oven at 200°C until it becomes golden. It usually takes 30–40 minutes to become golden.
