Ingredients

  • 2.5 lb chicken (thighs/drumsticks)
  • 1 large potato, cut into wedges
  • 1 large carrot, sliced
  • 4 garlic cloves, minced
  • 1 medium onion, chopped
  • 2.5 tbsp fish sauce (or 2.5 tsp salt)
  • 2.5 tbsp curry powder
  • ¾ tsp black pepper
  • 1 can (400 ml) coconut milk
  • 3 tbsp cooking oil
  • 1 large green bell pepper, chopped Chili to taste (optional)

Cooking Instructions

  1. Take a pan and heat oil over medium heat.
  2. Now add carrots and potatoes and fry them for 2 minutes. Take them out when the color becomes light brown.
  3. Take the same pan. Add onion, garlic, and ginger. Cook until soft.
  4. Now add chicken pieces and cook for 5 minutes until lightly brown.
  5. Pour in fish sauce, coconut milk, and water.
  6. Add curry powder and stir well. Cook it for 20-25 minutes.
  7. Add fried potatoes and carrots and cook for 5 minutes.
  8. Now add bell pepper and chili and cook for 1 minute.
  9. Now lastly, check the salt and pepper and adjust it according to the need.
  10. Finally, the Filipino curry is ready to serve.

Fish Sauce

If you do not have fish sauce, then you can use salt.

Chili is optional

If you love spicy food, then you can use chili; otherwise, you can skip it because it is not an important ingredient.

Chicken thighs/chicken breast

You can use chicken breast instead of chicken thighs, but cut it into small pieces.
